"Simply Southern" shares her recipes for Quick and Easy Lime Fluff, Strawberry
Fluff Congealed Salad, Chicken Casserole, Quick and Easy Jambalya, Quick
and Easy Lemon Pie, and Chocolate Chess Pie.
There is nothing like spring in the Sunny South. Everything is so
fresh and smells so good.
Today I would love to take yall along on a trip to my friend's southern
kitchen. Betty and her hubby Ken always open their home, full of southern
hospitality and country southern cookin' to all their family and friends.
A trip is not complete until you have eaten some of her irresistible southern
cooking.
Quick and Easy Lime Fluff

1 (16oz) carton cottage cheese
-
1 (3oz) package lime jello
-
1 (14oz)can crushed pineapple,drained
-
1 (6oz) carton whipped topping
Sprinkle dry jello over cottage cheese in a large bowl. Mix. Add
pineapple and whipped topping. Mix thoroughly. Chill until served.
Strawberry Lemon Congealed
Salad

1 (3oz) package strawberry jello
-
1 cup boiling water
-
1 can strawberry pie filling
-
1 (3oz) package lemon jello
-
1 cup boiling water
-
1/3 cup mayonnaise
-
1 (3oz) package cream cheese
-
1 (8 3/4oz)can crushed pineapple,drained
-
1/2 cup heavy cream,whipped
Dissolve strawberry jello in 1 cup boiling water;stir in pie filling.
Pour into a 9x9 inch dish;chill until partially set. Dissolve lemon jello
in 1 cup boiling water. Beat mayonnaise and cream cheese with mixer. Beat
in lemon jello. Fold in pineapple and whipped cream. Spread on strawberry
layer. Chill. Cut into squares and serve.
Oriental Vegetable Casserole

1 (16oz) can French style green beans

1 (16oz) can Chinese vegetables

2 cans cream of mushroom soup
-
1 pound Cheddar cheese, grated
-
2 (3oz) cans Chinese noodles
Drain the vegetables. Layer half of all the ingredients in a greased
casserole in the order given. Make a second layer in the same order. Bake
for 30 minutes in a 350 degree oven.
Chicken Casserole

1 1/2 cups chopped green onions
-
2 cups chopped celery
-
2 Tablespoons butter
-
1 package herb stuffing mix
-
1/2 cup butter
-
1 cup water
-
3 cups chicken, cooked and chopped
-
1/2 cup mayonnaise
-
3/4 teaspoon salt
-
1/4 teaspoon pepper
-
2 eggs,beaten
-
1 1/4 cups milk
-
1 can cream of mushroom soup
Saute onion and celery in 2 Tablespoons butter. Meanwhile spread
half herb stuffing mix in a greased 9x13 inch baking dish. Heat 1/2 cup butter
and the water and pour over mix. In a large bowl,mix chicken,sauteed onion
and celery,mayonnaise,salt and pepper. Spread over crumb mixture in baking
dish. Cover and refrigerate over night. Remove from refrigerator one hour
before baking. Spread soup over casserole and sprinkle with remaining herb
stuffing mix on top. Bake for 1 hour in a 350 degree oven.
Quick and Easy Jambalya

1 large onion,chopped

1 green pepper, chopped
-
1/2 cup butter
-
2 cups chopped cooked ham
-
3 cups cooked shrimp
-
1/2 teaspoon salt
-
1/4 teaspoon pepper
-
1 (8oz) can tomato sauce
-
1 (8oz) can tomato puree
-
1/2 cup dry sherry
-
2 cups cooked rice
Saute onion and pepper in butter. In a large mixing bowl blend all
ingredients. Bake in a greased 3 quart casserole for 40 minutes in a 350
degree oven.
Jalapeno Corn Bread
-
1 cup corn meal
-
1 cup cream style corn
-
1 cup grated Cheddar cheese
-
1/2 cup vegetable oil
-
1/2 cup buttermilk
-
1 teaspoon soda (omit if using self rising meal)
-
1/2 teaspoon salt (omit if using self rising meal)
-
2 eggs,beaten
-
2 Jalapeno peppers,chopped fine
-
2 Tablespoon bacon drippings
Mix all ingredients in bowl except for the bacon drippings. Put
bacon drippings in a 9x9 pan or black skillet. Heat in oven until drippings
cover bottom of pan. Pour batter into pan and bake for 20 to 25 minutes in
a 400 degree oven.
This is super served with vegetables or chili.
Chocolate Chess Pie

1 1/2 cups sugar

2 eggs, slightly beaten
-
1/3 cup cocoa
-
1/4 cup butter
-
1/2 cup evaporated milk
-
1/2 cup coconut
-
1/2 cup pecan pieces
-
1 9 inch pie shell,unbaked
Mix all ingredients by hand and pour in pie shell. Bake for 30 minutes
in a 400 degree oven. Cool and serve with vanilla ice cream or whipped cream.
Just eat and enjoy---FORGET THE CALORIES!
Quick and Easy Lemon Pie

1 prepared graham cracker crust

1 (6oz) carton whipped topping
-
1 (6oz) can frozen lemonade concentrate,thawed
-
1 (14oz) can condensed milk
Beat topping,lemonade concentrate and condensed milk in a large
mixing bowl with mixer. Pour into pie shell and chill an hour before serving.
Frozen limeade concentrate may be used in place of lemonade for a lime
pie.
